Serve up this Broccoli and Cheddar Crustless Quiche at your next Sunday brunch, and it’s sure to become a family favorite! Most quiche recipes are meant to be healthy and light, but the addition of a high fat crust can often overshadow all the positive nutritional elements of the dish. By ditching the crust, we keep this quiche light and nutritious. The key is to make sure that the eggs are enhanced with delicious flavor to makeup for the lack of crust. I highly recommend using an extra sharp cheddar if you can find it, as it really kicks up the flavor! At just 4 Smart Points for 1/6th of the quiche, this dish is the perfect addition to any brunch, dinner, or potluck.

I first had this tasty dish in a little hole-in-the-wall Italian restaurant in Los Angeles. It was served in a cast iron pan, and the smell alone was enough to have me drooling. Once I dug in, I was pretty sure I was in heaven. Moist chicken, and crisp, golden brown potatoes in a bright garlic wine sauce (it’s quite garlicky, so I’d recommend this dish for garlic lovers only). It was pure perfection. I even ate the peas, which is rare for me, because peas are not my favorite. If you look online, you’ll find a ton of different versions of this popular dish, but my version is slimmed down to offer all the flavor of the traditional dish, but for just 7 Smart Points per serving. Enjoy!

In an effort to eat less meat (the reason why is a whole looking other blog post for another time), I’ve been experimenting with more vegan and vegetarian Weight Watchers Recipes. A friend of mine cooked this for me one day, and it was so good, I knew I had to recreate it at home! The mild, soft polenta is topped with a tangy puttanesca sauce that’s to die for. Now, because you all know I love shortcuts, I used a prepared log of Trader Joe’s Organic Polenta. If you want to make your own from scratch, you absolutely could. I just often have my hands full while cooking dinner, so I try to save time wherever I can. But even with the pre-made polenta, this traditional Italian recipe is divine! You get a hint of the salty brine from the olives and capers, and the sweet and tangy tomato sauce balances it all out. It’s loaded with protein and fiber and is incredibly satisfying. A real bargain for just 6 Smart Points too! Enjoy.

If you’ve ever been to Olive Garden’s all-you-can-eat soup, salad and breadsticks lunch special, then you are going to love today’s recipe! I’ve been a fan of their Zuppa Toscana soup for as long as I can remember, but with all the fat and calories, indulging in this delicious dish at Olive Garden could easily cost me almost an entire day’s worth of Smart Points – and that’s before we factor in the breadsticks and salad. Yikes! So, I’ve come up with my own lighter version at home, and it is fantastic. It’s a simple, slow cooker recipe that turns out incredibly tasty, yet with just 6 Smart Points per serving. Admittedly, I was feeling quite lazy and made this with pre-cooked Italian sausage links from Applegate Farms. Ideally, you could use ground Italian chicken sausage for a more authentic flavor. But you will need to brown that sausage first before adding it to the slow cooker. By using the precooked sausage, I saved a step (and an extra pan to wash). Plus, Applegate’s sausages are really tasty! No harm, no foul. This copycat Olive Garden Zuppa Toscana recipe is a real win for any Weight Watcher. Enjoy!

This savory and satisfying side dish is a breeze to prepare and goes great with just about any meal. The tender lentils and pan fried mushrooms are incredibly delicious and packed with nutrition. And I love this unique salad that doesn’t feature the leafy greens as its star….they are merely a supporting character in this dish.

I used baby kale in mine, but arugula or spinach would work really well too. The earthy flavors make this hearty Weight Watchers recipe a delicious dish that is sure to make an impression, while still keeping those Smart Points in check.

Heaven on a dish, this delightfully easy chicken recipe packs a tremendous flavor punch. The sweet and salty flavors of the olives and apricots are a dream, and the bit of caramelization from the chicken just makes this meal melt in your mouth.

If you aren’t a fan of apricots, this dish would work well with dried prunes or figs too. And I love how simple it is to prepare! I literally had it in my fridge within 5 minutes, then I just let it sit overnight, so by the time the next evening rolled around, I simply had to toss it in the oven and forget about it. Serve with your favorite salad or steamed veggies, and serve atop some warm, while wheat couscous if you have a few extra Points to spare.

If there’s one food I could eat every day for weeks without tiring if it, it’s tacos. That’s partly because there are SO many different ways to prepare them, and I’d never get bored. For this chicken tacos recipe, I used cabbage leaves instead of traditional taco shells to help cut carbs and calories. I also added some swiss chard leaves for added nutrition and for its aesthetics.

The fresh, raw corn salsa is such a unique flavor too…which I adored. My husband said he would have preferred that the corn was roasted first, so if raw corn isn’t for you, just roast the cob in the oven or on the grill first. But the real show pony of this recipe is the chipotle sour cream!! I could NOT get enough of it! These tacos were a total hit…my 6-year-old devoured them….even with that cabbage shell. And at just 5 Smart Points per taco, you are getting one seriously delicious and nutritious dish!

One of my new favorite vegetable side dish recipes is this Balsamic Garlic Roasted Green Beans and Mushrooms dish. It’s quick and easy (you know I love those kinds of recipes!) and is very flavorful. The sweet and tangy balsamic vinegar adds such a nice taste and light caramelization to the perfectly roasted veggies. I seriously could not get enough of it. Serve this healthy side dish with your favorite protein for a complete meal!

With the chilly weather finally in full force here in SoCal (and by chilly, I mean 60 degrees), I’ve been ALL about the soups. I find that they are a great way to use up extra veggies before they go bad.

So last week, when I found a head of cauliflower in my vegetable drawer that I had forgotten to roast as a side dish one evening, I decided to use it in a quick, easy, and very light Cauliflower Soup Recipe.

There are many ways to make cauliflower soup…but this is one of the easiest and fastest. If you want to add an extra flavor boost, try roasting the cauliflower and garlic before adding them to the pot!

So good. At just 4 Smart Points, this simple soup makes a great side dish for a chilly day.

With my New Year’s Resolution in full swing, I am committed to eating healthy (yet deliciously), and this Lemon Butter Chicken Recipe is an ideal dish!

The chicken is cooked to perfection in a velvety lemon butter sauce that is to die for. It’s hard to tell in the photo, but there is spinach in that dish too…it’s just buried under the heavenly sauce.

Next time, I’ll try doubling the spinach I used because it wilted so much in the sauce, and there really wasn’t a lot of it in the final product.

And at just 5 Smart Points per serving, this dish makes a great Weight Watchers dinner recipe that will help keep you on track without sacrificing flavor.

I’ve said it before and I’ll say it again…I am OBSESSED with Chinese food. Seriously, I can never get enough. But following the Weight Watchers plan, eating Chinese food on a regular basis can get me into some serious trouble!

So I regularly attempt to create my own healthier and lighter versions, hence this incredibly delicious Chicken Lo Mein Recipe. It was AH-MAZING. Me, my husband, and both kids loved it. Plus, it was super quick and easy!

When adding the veggies to this dish feel free to get creative…I used what I happened to have on hand in the fridge, but next time, I’ll add some mushrooms, bell peppers, and maybe some bok choy.

Also, if you don’t have access to or can’t find the broccoli slaw, you can use regular broccoli and shredded carrots. I just used the slaw form because my kids are more likely to eat vegetables if they aren’t easily visible. But if you need to get your Chinese food craving satisfied, this Easy Chicken Lo Mein is a WINNER at just 7 Smart Points per serving! Enjoy.

One great thing about having my in-laws visit is that I always pick up a few delicious Middle Eastern-style recipes that taste like I’ve spent hours cooking them, but are actually quite simple.

This Moroccan Apricot Chicken Recipe is just that. The chicken is fall-off-the-bone tender and unbelievably moist and juicy. It’s rubbed in a combination of spices, seared, and then braised to perfection in the most delicious sauce. And it’s all done in one pot (you know I love those one-pot meals)!

This chicken turns out perfect EVERY time I cook it, and it’s become a staple for dinner parties or big family dinners. Serve over rice or couscous, along with some roasted veggies or salad for a complete meal. Enjoy!

I’m going to cut right to the chase here…this Teriyaki Meatball Bowl was amazing! My kids loved it, as did my husband and me.

I used ground chicken for the meatballs, but ground pork or turkey would work well too. Baking the meatballs also made for an easier, more hands-off cooking process, and that homemade Teriyaki sauce is beyond delicious — hitting all the right flavor notes, sweet, tangy, and salty. SO GOOD!

If you want to kick up the heat a bit, feel free to add in some red pepper flakes. I normally use brown rice anytime I make rice, but my son has been begging for white rice, so I decided to treat him.

The brown rice would definitely add some more fiber, so that’s what I’d recommend if you are trying to eat healthily.

Definitely add these Teriyaki Meatball Bowls to your menu this week…you won’t be sorry!

Another one of my favorite, super easy chicken dinner recipes is this delicious Lemon Artichoke Chicken dish. The seasoning is soon tasty, and the chicken comes out perfectly juicy and tender. At just 5 Points per serving, you get a delicious entree that offers a nice amount of protein and fiber with barely any carbs.

Also, note that the recipe only calls for a tsp of saffron threads, but my photo may show more. I tend to get a little heavy-handed with the saffron because I adore it, but feel free to use as much or as little of the saffron as you want.

This dish works really nicely over orzo pasta or brown rice, and I like to serve it with a simple side salad for a complete meal. Enjoy!

Growing, up there was this one little local Chinese restaurant in my neighborhood. I think it was called Chan’s Tea House. But it was the only one nearby, and sometimes my girlfriends and I would skip school and treat ourselves to a nice lunch there.

Cashew Chicken was always my meal of choice there. It hit all the flavor notes I craved – sweet, tangy, salty, and a tad bit spicy. The crunch of the roasted cashews were my favorite part, though. But since then Cashew Chicken has been a lifelong comfort food of mine. To this day, anytime I have it, it instantly reminds me of skipping school with my friend’s to cozy up for some girl talk at Chan’s Tea House.

If you’ve ever had a Broccoli Salad before, you’ll understand the reason why this salad has become such a popular side dish at parties, buffets, and potlucks – it’s just so flipping GOOD!

My spin on this well-loved dish uses a few variant ingredients to keep it a bit lighter and more heart-healthy. The crunchy broccoli and walnuts are combined with onions and raisins, then topped with a creamy, sweet, and tangy dressing that is insanely delicious.

There are lots of variations to this salad, so you can definitely alternate/add/eliminate other ingredients if you want to shake things up.

Try it with carrots, bacon, pumpkin seeds, candied pecans, dried, cranberries, kale, or even roasted Brussels sprouts.

I highly recommend adding this as a side dish to one of your favorite dinners, or adding some grilled chicken to it and serving it as a lunch salad.

Have I mentioned before how much I adore one-pan meals? With 2 young kids, 3 cats, and a husband who acts like a teenager, they just make my life SO much easier.

This One Pan Cheesy Chili Mac Recipe was a HUGE hit and I’m really excited to share it. I used extra lean ground beef in this, but you could easily substitute ground chicken or turkey if you prefer.

The tender, perfectly seasoned meat is cooked in one skillet along with whole wheat macaroni noodles, and then it’s all topped with gooey, melty Mexican cheese.

Try this recipe, and I’d be surprised if your family didn’t love it as much as mine.

As much as I love cooking, there’s nothing more I hate than doing the dishes and cleaning up afterward. Most of my cooking tools and pots and pans need to be hand washed, so depending on the complexity of my recipe, that can lead to a LOT of post-cooking work. This is why I have become a huge fan of one-pan/pot meals – they are super easy to cook and require a lot less cleanup.

This One Pan Quinoa Taco Skillet Recipe has become a recent favorite in our home. Made with quinoa instead of rice and lean ground turkey instead of ground beef, it’s a lot healthier and absolutely delicious.

Top with shredded cheese, red onion, avocado, roasted corn, shredded lettuce – or whatever your taco-loving heart desires. Just make sure to count the extra Points you may incur. Enjoy!

Talk about a complete meal in one bowl! This incredibly delicious Arugula and Smoked Salmon Salad is absolutely packed with healthy fats, proteins, and carbohydrates. Not only is mouthwateringly good, but it is very filling and loaded with enough energy and nutrition to last you a long time.

I love making this salad for lunch, and I have no problem not getting hungry until dinner time. Or, I will make this salad for dinner when I want to avoid snacking in the evening (which is my biggest problem).

The flavor combination in this Weight Watchers salad recipe is outstanding….peppery arugula topped with smoky salmon, tangy balsamic coated tomatoes, filling whole wheat couscous, and wonderfully nutty toasted pine nuts with sweet raisins. All are covered in a creamy, tangy dressing that will leave your tastebuds doing backflips.

My husband and I are absolutely in love with this Arugula and Smoked Salmon Salad Recipe, and I highly recommend all of you give it a try! It’s one very complete, and satisfying dish for just 9 Points.

Fall is officially in full swing, and like everyone else, I’m on a pumpkin craze. There are SO many amazing pumpkin flavored goodies and treats available right now, it’s insane!

In addition to trying out some tasty looking products I find at the store, I’ve also been in the kitchen whipping up some homemade, healthy pumpkin recipes too.

Though it’s been over 100 degrees here this week (boo for California in the fall!), I’ve been working on a Pumpkin Cornbread Recipe that I hope you love as much as I do! Moist, delicious, slightly sweet cornbread that bakes up light and tender boasting a traditional corn flavor, but with a hint of pumpkin and spice.

Goes AMAZINGLY well with chili or soup, and if you want to spend the extra points, is best when topped with hot butter. So get on the pumpkin craze bandwagon and give my Pumpkin Cornbread recipe a try this fall.

Each serving is just 4 Points!

I don’t know about you guys, but whenever I go to IKEA, I get excited beyond a normal amount, to hit up their cafe and indulge in those amazing Swedish meatballs!

There’s just something about them that tastes so good and is so comforting. Of course, I know that they are not the healthiest fare, which is why I decided to create a more nutritional version at home. Also, sometimes, I’m just lazy. And I don’t always feel like making meatballs.

So I thought that maybe I could do a sauté version that would be just as tasty, but super easy. And it was a great success! I served it over some egg noodles, and the kids, the husband, and I all loved it. Super easy and super delicious. Though next time, I’ve gotta make sure I get some IKEA Lingonberry sauce to serve with it, because it’s just not the same without it. Enjoy!

It’s officially fall, folks, and I love getting in the kitchen and whipping up some hearty, soul-warming soups! My husband’s personal favorite is this Healthy Jambalaya Recipe. It is packed with 3 tasty proteins – chicken, shrimp, and sausage.

You can choose to make this a tad lighter by subbing out the andouille sausage with some light turkey or chicken sausage, but I’m such a fan of the spicy and flavorful andouille, I’m willing to sacrifice a Point or two for that fantastic flavor.

Each ample serving is certain to fill your stomach and your soul, at just 8 Points. The easy-to-follow recipe will have you wanting to make this jambalaya again and again. Enjoy!

What better way to get in a nice big serving of veggies than to serve them atop noodles with a delicious Asian-style sauce smothering everything! This Savory Vegetable Stir Fry dish has become a family favorite of ours because not only is it healthy and delicious, but it’s a breeze to prepare.

Feel free to mix it up with the veggies and toss in whatever you have on hand. It also works great with cauliflower, bok choy, zucchini, carrots, and snap peas.

You could also serve this over brown rice or quinoa if preferred, and it reheats brilliantly the next day, so make sure to make some extra for leftovers!

There’s little I love more than a meal that delivers wonderful presentation and flavor but with very little effort and prep. This Roasted Chicken Breasts with Tomatoes and Garbanzo Beans dish is such an amazing and healthy Weight Watchers recipe that boasts tender, juicy chicken that is wonderfully seasoned, and yet it is incredibly simple to make.

The fresh tomatoes add a nice touch of acidity while the garbanzo beans add a nice earthy flavor. I chose to cook this with bone-in and skin on chicken breasts because it really helps to keep the chicken moist. Just make sure to remove the chicken skin before eating if you are watching your Weight Watchers Points.
