You might really be wondering about this recipe. You may have never even heard of picadillo before, or if you have, maybe you’ve never had it. Let me let you in on a little secret – it’s delicious. It smells heavenly and tastes even better.

It’s the ultimate Cuban comfort food and it’s one of my kids’ favorite recipes. This one always gets gobbled up in our house.

I love salads. They’re a great way to have a healthy meal and really fill up without eating all your Points in the process. But what I don’t love about them is the prep work. There’s chopping, slicing, washing, more chopping…It’s time consuming and messy and I usually am just too beat to bother.

Some days, however, it’s nice to have a salad that I can whip together. You know, one of those ones that’s a no-fuss side salad that comes together in no time and goes with about anything? This Thai Ginger Peanut Slaw is one of my absolute favorites of that.

Recently, my family has been eating lots of quinoa and let me tell you, I’m taking advantage of it by making as many Weight Watchers quinoa recipes as I can!

Today’s recipe is very simple. It’s just your ordinary Greek Salad recipe but instead of using lettuce as a base, I used quinoa.

Today, my kids asked me to post about their favorite salmon recipe – my Honey Lime Salmon. Roasted salmon is a great meal option for us on busy days when I’ve had little to no time to prep because it cooks up so quickly.

Salmon in general is usually a great meal option for those busy days, but my Honey Lime Salmon is just perfect. It’s easy to prepare and needs only a handful of ingredients. They’re things that I often have on hand, so it’s a great one when I’m in a rush but still need that healthy dinner option.

With very little fuss, I can get a healthy and delicious meal on the table that the whole family enjoys. It’s a win-win.

I’m not always a huge smoothie fan. I’ll get onto a smoothie kick every once and a while and they’ll be a great snack or a healthier breakfast-on-the-run option. But, generally, I can pass up smoothies without regret.

One of the definite downsides of smoothies is that all those delicious fruits and vegetables that are zero points suddenly have lots of points. The “smoothie rule” is that if it’s blended or pureed, you must count ALL the points. It’s easy to eat considerably more of something in liquid form than in solid form. That means that all those delicious fruits that I use to sweeten my smoothie suddenly have a pretty solid impact on my daily point allowance.

My husband and I were on a trip to Israel a few years ago when we stopped at an amazing Arabic restaurant in Jerusalem. And of all the fantastic foods that I got to try on my visit, I will never forget the fattoush salad I had there. IT WAS AMAZING.

I know, that sounds a bit dramatic, but let me tell you, it was life changing. Seriously, I now not only make it regularly, but one of the main spices, sumac, is now a staple in my kitchen. I use it on meats, salads, steamed rice…

You’ve probably seen lots of recipes lately for quinoa here on LaaLoosh and other food blogs. It’s popular with good reason. It’s very much like rice, it’s a mild and versatile grain that you can do just about anything with.

If you’ve ever been to a good Italian restaurant and ordered Chicken Piccata, then you know how incredibly delicious this dish can be. It’s so simple, yet tremendously flavorful.

There’s an amazing Italian restaurant not too far from me that I paid a recent visit to (I was craving their breadsticks, but that’s a different story).

While I was there, I noticed something on the menu that I simply had to try. It was a twist on the traditional Chicken Piccata and the description alone had me salivating. It wasn’t Chicken Piccata with the traditional lemon and wine sauce, but instead, it was made with a creamy Parmesan sauce. And if you know me, you know that cheese is my weakness. I just HAD to try this.

Have you heard of this new trend? It’s called Crack Slaw. It’s apparently a big deal and it’s got such an interesting name that I just had to see what it was. It’s pretty simple, actually.

Once I figured out what it was, I knew it would be an ideal low-calorie recipe. It’s high in protein but low in sugar and carbs – so it’s perfect. I did some research and came up with my own version – and it’s amazing.

Well, my favorite team didn’t make it to the Super Bowl (so close, though!), but that doesn’t mean I won’t partake in Super Bowl festivities! And where there’s a Super Bowl party, there’s food…lots of yummy food.

While this Crock Pot Chicken Taco Chili doesn’t necessarily need to be deemed a Weight Watchers Super Bowl Recipe, it’s the perfect game time grub that can feed a crowd easily.
It’s actually one of my go-to party recipes that I often use when I’m hosting a lot of people.

With the cold, rainy weather we’ve been having here in SoCal lately, I’ve been a soup making machine. My kids LOVE soup, so it’s a great meal to make for the family, since everyone will eat it. I really like soup – it fills me up and it’s easy to make.

Plus, soup is so easy to freeze for later. I can make up a big batch and then freeze part of it for when I need a quick, healthy and filling snack later.

Notcho-yo average nacho (see what I did there?), but these Cauliflower Nachos are fabulous. They’re a decadent treat that is guilt free. It’s healthy, tastes fabulous and is going to hit the spot. What’s better than that?

Gyros. I ADORE them. And when I used to live in Los Angeles, my husband and I used to go to this amazing little restaurant that sold the most delicious gyros. It was right around the corner from our apartment, and we used to walk there VERY REGULARLY for dinner. I remember how I used to stand there and literally salivate as I watched them slice that beautifully tender meat off the rotisserie.

Chili has always been one of my favorite cold weather foods – there’s just something so comforting and soul warming about it. And my Chipotle Chicken Chili Recipe has an extra boost of flavor heat to warm you up! Made with crumbled ground chicken and Italian sausage, this chili is packed with protein and is incredibly satisfying.

I don’t know about you – but I’m ready for fall. Here in our little corner of the Midwest, the weather can’t make up its mind. It’ll be in the 50s one day and the upper 70s the rest of the week.

Since fall and winter are two of my favorite seasons (actually the only one I don’t like is the really hot part of summer), I’m always eager to get them here a little quicker.

One of the ways I can do that is with a little squash soup. I’m pretty picky about my squash soup. I’ve had good squash soup, and I’ve had horrible squash soup.
